By Request - Champagne Cocktails For The Season

This post is dedicated to my childhood friend and awesome gal, Colleen McCollum, who is a big champagne fan and asked me to do this post. These champagne-type cocktails are perfect for the holidays and for celebrating special occasions. Champagne/Sparkling Wine is synonymous with celebrations, but has become an all-season and all-occasion drink of choice for many people.

 

Velvet Rose (aka French Martini)

  • 2 oz Grey Goose Vodka
  • 1 oz Chambord
  • splash of pineapple juice
  • float chilled Sparkling Wine or Champagne

Garnish - none

Glass - Cocktail glass, champagne flute, or coupe

Prep - Prepare all ingredients except sparkling wine in a ice-filled mixing glass. Shake well and strain into a chilled champagne flute, cocktail glass, or coupe. Add sparkling wine by floating on top for coupe or cocktail glass or to the top in champagne flute.

 

French 75

  • 2 oz Bombay Sapphire gin
  • 1/2 oz fresh lemon juice
  • 1/2 oz simple syrup
  • float or a generous amount of chilled Sparkling Wine or Champagne

Garnish - lemon twist

Glass - Cocktail glass or champagne flute

Prep - Prepare all ingredients in an ice-filled mixing glass except sparkling wine. Shake well and strain into a chilled cocktail glass or champagne flute. Fill sparkling wine to the top in a champagne flute or float in cocktail glass. Garnish lemon twist

 

Ginger Bliss

  • 1.5 oz Domaine de Canton Ginger Liq
  • 1/2 oz fresh lemon juice
  • 1/2 oz * Basil-infused simple syrup
  • 3-4 dashes of Peychaud's bitters
  • float chilled Sparkling Wine to the top

* For basil-infused syrup, infuse simple syrup with 6 fresh basil leaves over medium heat - bring to a boil. Simmer for 10 minutes - let cool and strain into a bottle without basil leaves.

Garnish - basil leaf and lemon twist

Glass - Champagne flute

Prep - Prepare all ingredients except sparkling wine in an ice-filled mixing glass. Shake well and strain into a chilled champagne flute. Fill sparkling wine to the top. Garnish 1 basil leaf and lemon twist.

 

Bella Donna

  • 1.5 oz Bacardi Gold rum
  • 1/2 oz fresh lemon juice
  • 1/2 oz Limoncello
  • float chilled Prosecco to the top

Garnish - lemon twist

Glass - Champagne flute

Prep - Prepare all ingredients except Prosecco in an ice-filled mixing glass. Shake well and strain into a chilled champagne flute. Fill Prosecco to the top. Garnish lemon twist.

 

Champagne Celebration

  • 3-4 dashes of Peychaud's bitters
  • 1 sugar cube
  • 1 oz Courvosier VSOP cognac
  • 1/2 oz Cointreau
  • chilled sparkling wine

Garnish - none

Glass - Champagne flute

Prep - Prepare all ingredients except sparkling wine in an ice-filled mixing glass. Shake well and strain into a champagne flute. Fill sparkling wine to the top.

 

Poinsettia Punch (batched)

  • 1 bottle of Sparkling wine (Brut)
  • 3 cups of cranberry-apple juice
  • 1/4 cup of orange liq, i.e. Cointreau or Gran Gala liq or Grand Marnier (preferred)
  • 1/4 cup of white grape frozen concentrate (thawed)

Garnish - none

Glass - Champagne flute

Prep - Stir all ingredients in a 2-quart pitcher and refrigerate for at least an hour before serving.

 

Asian Pear Bubbly (signature drink, pictured above)

  • 2 oz Absolut Pear Vodka
  • 1/2 oz Domaine de Canton Ginger Liq
  • 1/2 oz Limoncello
  • 1/2 oz Simple Syrup
  • 1/2 oz pulp-free orange juice
  • float dry Prosecco on top

Garnish - Asian Pear slice

Glass - Coupe or Cocktail glass

Prep - Prepare all ingredients in an ice-filled mixing glass except Prosecco. Shake well and strain into a chilled coupe or cocktail glass. Float Prosecco in top. Garnish Asian pear slice.

 

Sparkling Rye (adaptation of a great summer cocktail)

  • 1 oz Buillet Rye whiskey
  • 1/2 oz St. Germain Elderflower Liq
  • 1/2 oz simple syrup
  • 1/2 oz fresh lemon juice
  • 1/2 oz unfiltered apple juice
  • fill with sparkling wine

Garnish - Granny Apple cubes

Glass - Collins glass

Prep - Prepare all ingredients except sparkling wine in an ice-filled mixing glass or tin. Shake well and strain into a collins glass. Fill sparkling wine to the top. Garnish apple cubes.
